Our household is very pro-egg. It's one of the most nutritious foods around, the yolk more so than the white. Do not worry about the cholesterol content. Dietary cholesterol is good for you as a precursor to various hormones, and contributes only a small amount to serum cholesterol. Without cholesterol, your cells would have no walls, and you would be a puddle of water on the floor. It also coats your nerves, protecting them. It may be protective against cancer.
A prospective study out of South Korea found that all-cause mortality (deaths from all causes) was minimized when total cholesterol is between 180 and 270. I am not too worried about this number. I follow more closely the ratio of triglycerides to HDL. Ideally, you want to get that under 2. I achieved that through being more physically active, and eating half an organic avocado daily, along with my scrambled organic egg.
